Xanthan gum can stabilize almost anything that contains oil. It is therefore used as a thickener e. g. : in dairy products, ice cream, sauces, tomato ketchup, mayonnaise, mustard and dressings. In addition, xanthan gum is used in many products of the cosmetics industry, such as lotions or shampoos. Xanthan gum is also used to make lubricants. Xanthan gum is hot and cold soluble. High freezing and thawing stability prevents the formation of ice crystals.
