Fresh mango, on the other hand, impresses with its juicy texture and aroma, which is most intense immediately after harvest.

One difference that is often overlooked: Mango powder has a significantly higher calorie density per gram than fresh mango because it contains no water. If you want to estimate the amount, it’s best to use the guidelines on the package as a reference.

 

Production of Mango Powder: Freeze-Dried vs. Spray-Dried

In spray drying , mango puree is atomized and dried at high temperatures. This process is faster and less expensive. However, the color and flavor are noticeably weaker as a result.
