What is blue spirulina?
Blue spirulina is not a separate organism, but a concentrated extract from the microalgae Spirulina platensis, which is one of the oldest forms of life. The active ingredient behind it is called phycocyanin (Greek: phyco = algae, cyanin = blue-green): a water-soluble protein pigment that is mainly obtained from spirulina and gives the extract its characteristic, intense blue color. The powder may also naturally contain protein as well as various B vitamins and trace elements.
The difference between blue and green spirulina
You may already know green spirulina as a so-called "superfood". But the difference to the blue variant is crucial: green spirulina is the complete, dried algae - with chlorophyll, phycocyanin and all other components. Blue spirulina is produced when the phycocyanin is specifically isolated and concentrated from the algae. This makes three specific differences:
- Optics: Green produces an earthy olive tone - blue a bright, deep sea blue that immediately stands out in the kitchen and glass.
- Taste: Green spirulina tastes intensely of algae and is not to everyone's taste. Blue extract is largely tasteless.
- Color intensity: Due to the high pigment concentration, you only need small amounts of Blue Spirulina for a strong color effect.
How is blue spirulina extracted from the algae?
The path from water basin to powder is more complex than you might think. It all starts with the controlled cultivation of Spirulina platensis in clear freshwater pools - ideally in sunny regions, without pesticides or herbicides. Then four steps follow:
- Harvesting and drying of the algae mass at below 40 °C to ensure the quality of the extract.
- Extraction of the pigment using a gentle, aqueous process that dissolves phycocyanin from the algae cell.
- Filtration to separate cell residues and purify the extract.
- Spray drying to the finished powder - without additives, flavorings or separating agents.
The result: a pure natural product with high color intensity and consistent quality.
Blue spirulina: recipes for smoothies and bowls
The kitchen is the playground of the blue extract. Just a few grams are enough for intense shades - there are no limits to your creativity:
- Mermaid Smoothie: Banana, coconut milk and mango blended with a pinch of extract - the ocean in a glass.
- Ocean Bowl: Puree frozen banana and blueberries, color with the powder, top with shredded coconut and granola.
