Almond protein is a byproduct of almond oil extraction. The almonds are first blanched—that is, their skins are removed—and then cold-pressed. The resulting press cake is high in protein and low in fat. It is gently dried and ground into a fine protein powder.
What makes this process unique is that it does not require any raw materials specifically grown for the protein; the material is a byproduct of the manufacturing process anyway. The result is a natural powder with a significantly lower fat content than that of whole almonds and a naturally delicate almond flavor that is immediately noticeable during processing.
How to Use Organic Almond Protein Powder
In a shake, almond protein powder works especially well with plant-based milk alternatives: oat milk enhances its nutty flavor, while almond milk intensifies it. When stirred into granola, it’s barely noticeable as a powder.
When baking, there are a few things to keep in mind: Almond protein is low in starch and gluten-free. As a result, it binds differently than flour.
