What are cashews actually - and where do they come from?
Spoiler: The cashew is not a nut at all. Botanically speaking, it is the kernel of a stone fruit - the so-called cashew apple. The cashew tree originates from tropical north-eastern Brazil, but was brought to West Africa and India by Portuguese sailors in the 16th century, where the world's largest areas of cultivation are located today. The edible kernel sits in a hard shell that contains a skin-irritating resin - processing is therefore complex and involves several stages. In short: every organic cashew contains a lot of manual work before it reaches you.
