What exactly are cashews—and where do they come from?
Spoiler: A cashew isn’t actually a nut. Botanically speaking, it’s the kernel of a drupe—the so-called cashew apple. The cashew tree is native to tropical northeastern Brazil but was brought to West Africa and India by Portuguese sailors in the 16th century, where the world’s largest cashew plantations are located today. The edible kernel is encased in a hard shell that contains a skin-irritating resin—which is why processing it is a complex, multi-step process. In short: A lot of manual labor goes into every organic cashew before it reaches you.
