Sodium hydrogen carbonate (NaHCO3) is a sodium salt of carbonic acid and belongs to the hydrogen carbonates. The compound must not be confused with sodium carbonate (soda, molecular formula Na2CO3). The product with the E number 500, also known as baking soda, is used in foods as a leavening agent and in effervescent powders. It is a mixture of baking soda with a solid acid such as citric acid. It is also found in bath tablets and fire extinguishing powders. It is also used in the softening of water. Sodium bicarbonate can also be found under the names cooking soda, baking soda, baking soda and the brand names Bullrich salt and Kaiser Natron. Sodium bicarbonate is a colorless, crystalline solid that decomposes above a temperature of 50 °C to form sodium carbonate by splitting off water and carbon dioxide.
