Staghorn salt
Stag's horn salt, also known as ammonium or ABC salt, is a strong raising agent. In the past, it was obtained from deer antlers or horn or leather waste, which explains the origin of the name. Deer horn salt is a leavening agent. It is used to loosen flat baked goods, such as shortcrust pastry, speculoos or gingerbread. It is not suitable for high pastries (e.g. cakes) and differs from baking powder in that it does not contain any acidic components. Deer horn salt has a slightly pungent ammonia smell, which disappears during baking. It tastes of ammonia, but deer horn salt should not be consumed raw as this is harmful to health.
